Сharlotte russe (Russian apple cobbler)

    When you want to eat something sweet and tasty in the evening but don't want to spend lots of time in the kitchen, here is a recipe that is popular in Russia, especially in autumn during apple season.

    Serves: 4 

    • 4 eggs
    • 150g caster sugar
    • 90g plain flour
    • 2 to 3 medium size apples

    1. Preheat the oven to 180 C / Gas 4. Butter a baking dish.
    2. Separate the eggs. Whisk the whites with a hand-held mixer and beat until thick, gradually adding the sugar.
    3. Add yolks and continue beat. Add flour and continue beating until fully incorporated.
    4. Peel, core and dice the apples.
    5. Pour half of the mixture into the dish, cover with the apples and pour the remaining mixture over the apples.
    6. Bake in the oven until puffed up and browned, about 40 to 60 minutes. Do not open the oven door, otherwise your charlotte will collapse.
