Mini banoffees

    A really easy to make dessert that looks gorgeous. Make these mini banoffees in cupcakes cases, or make them a little larger and make them in small fluted tart tins.

    Serves: 8 

    • 225g digestive biscuits, crushed
    • 60g butter, melted
    • 1 small pot double cream
    • 1 tin Carnation® caramel
    • 1 large banana, sliced
    • 1 Flake® bar

    1. Combine biscuits and butter; stir well. Press a few teaspoons of the mixture into small cupcake cases. Place in the fridge to set for at least 1 hour, or in the freezer for 30 minutes.
    2. Whip the cream to stiff peaks. Set aside.
    3. Once fully set, remove the bases from the cases. Put 1 to 2 tablespoons of caramel onto each base. Top with banana slices, then with cream and finally some crumbled Flake®. Enjoy!
