Preheat the griddle so it is on a medium heat.
Season the steaks with some salt and pepper. Mix the soy sauce, Tabasco®, redcurrant jelly, peppercorns, red chilli and a drizzle of olive oil. Leave the steak in the mixture for 10 minutes.
Place the steaks on the griddle, fat side down. Leave for 2 minutes. Place on the flat side and brush with the rosemary. Flip after 3 minutes and leave for a further 4 minutes. Rub the steaks with the garlic cloves and then take of the heat.
Chop the parsley finely and sprinkle on a chopping board. Drizzle with olive oil. Place the steaks on there and leave to rest for 5 minutes. Flip and repeat.
For the side dish, chop the potato into chunky chip size peices and then place in a freezer bag. Add the rest of the ingredients and shake.
Place potatoes on the griddle and cook until golden.
