Dad's steak

    This meal would entice us home from school but shock us because dad would cook it. It has lots of flavour and can be served with chips but I have included a side dish! Rump or sirloin is my preferred choice of cut but if there is a fillet just season more. Try and ask your butcher to get the fat on one side.

    Serves: 2 

    • 2 sirloin steaks
    • salt and pepper to taste
    • 1 teaspoon soy sauce
    • 3 drops Tabasco®
    • 1/2 tablespoon green peppercorns
    • 1/2 red chilli, sliced
    • 1 teaspoon redcurrant jelly
    • olive oil
    • 1 small bunch rosemary
    • 2 cloves garlic
    • 1 handful parsley
    • To serve on the side
    • 2 potatoes
    • 1 pinch chilli flakes
    • 1 teaspoon paprika
    • salt
    • olive oil
    • 3 cardamom pods

    1. Preheat the griddle so it is on a medium heat.
    2. Season the steaks with some salt and pepper. Mix the soy sauce, Tabasco®, redcurrant jelly, peppercorns, red chilli and a drizzle of olive oil. Leave the steak in the mixture for 10 minutes.
    3. Place the steaks on the griddle, fat side down. Leave for 2 minutes. Place on the flat side and brush with the rosemary. Flip after 3 minutes and leave for a further 4 minutes. Rub the steaks with the garlic cloves and then take of the heat.
    4. Chop the parsley finely and sprinkle on a chopping board. Drizzle with olive oil. Place the steaks on there and leave to rest for 5 minutes. Flip and repeat.
    5. For the side dish, chop the potato into chunky chip size peices and then place in a freezer bag. Add the rest of the ingredients and shake.
    6. Place potatoes on the griddle and cook until golden.
    7. Enjoy!!!
