Cheesy chicken puff pie

    My friends recipe that I'm in love with! Doesn't sound like it should be nice but it really is!

    • Milk- can be full,semi, skimmed or soya
    • Chicken Breast- 1 per 2 people
    • 1 large leek
    • Mushrooms-as much as you like
    • 1 onion
    • Sweet corn- optional
    • 1 block of cheddar cheese
    • Corn flour to thicken
    • Salt and pepper to taste
    • Pre rolled puff pastry


    1. Chop and prep all your veg and chicken
    2. Add chicken to heated oil in a pan and cook through properly.
    3. Set chicken and veg aside until you make your cheese sauce. Preheat oven depending on pastry instructions
    4. Add milk and half block of grated cheese to a pan. How much milk u need depends on how much sauce you need. What you see in the pan is how much sauce you will get from it.
    5. Keep stirring cheese sauce until cheese all melted.if too runny add some corn flour and whisk until it's at a nice consistency. Add salt and pepper to taste
    6. Take cheese sauce off heat and add your chicken and raw veg.
    7. Add contents of pan to a heat proof oven dish
    8. Add pastry to top of dish. You may need to cut the edges to fit dish.
    9. Add to a preheated oven for around 35mins. The pastry packaging will let you know what temp
    10. Remove from oven and serve!
