    Serves: 4 

    • 2 cloves garlic
    • 2 bird's eye chillies, aka Thai chillies
    • 1 lime, juiced
    • 1 tablespoon sugar
    • 1 tablespoon rice wine vinegar
    • 4 tablespoons warm water
    • 4 tablespoons fish sauce
    • 1 small carrot, cut into thin strips

    1. Peel the garlic and stem the chillies. Smash together to form a paste using a mortar and pestle. Stir in the sugar and lime juice, then add the vinegar, water and fish sauce. Whisk to combine. Add the carrot, then serve.

    What a great recipe! I love this sauce, it is now my fave dipping sauce. I used normal green chillies instead of birdseye chillies and I used lemon instead of lime, but it was still beautiful.  -  27 Dec 2014
