Slow cooker sugar free apple purée

    If you have cut out sugar from your diet like we have, you may choose to come up with a sugar replacement and for us fresh stevia leaves from the garden work really well. This apple purée is fantastic for using up autumn apples and great for freezing and enjoying throughout the winter. The only sugar in this purée are the natural sugars present in the apples.

    Makes: 18 servings apple puree

    • 1 handful fresh stevia leaves
    • 600ml boiling water
    • 1.8kg cooking apples - peeled, cored and chopped

    1. In a bowl, combine the boiling water and the fresh stevia leaves. Leave to steep until cool, or longer if you want a stronger flavour. Strain and discard the stevia leaves.
    2. Preheat the slow cooker to the auto or low setting. In a saucepan over a medium heat, combine the stevia infused water and the apples. Bring to a gentle simmer then transfer everything to the slow cooker and cook for 3 to 4 hours. Remove from the slow cooker and blend using a hand held liquidiser. Serve or freeze.


    The apple variety that you use will impact the sweetness of the purée. If you are using eaters, then a handful of fresh stevia or less would be absolutely fine. However, if you are using cookers, you should increase the amount of fresh stevia leaves you use to reach the desired level of sweetness.
