If you have cut out sugar from your diet like we have, you may choose to come up with a sugar replacement and for us fresh stevia leaves from the garden work really well. This apple purée is fantastic for using up autumn apples and great for freezing and enjoying throughout the winter. The only sugar in this purée are the natural sugars present in the apples.
The apple variety that you use will impact the sweetness of the purée. If you are using eaters, then a handful of fresh stevia or less would be absolutely fine. However, if you are using cookers, you should increase the amount of fresh stevia leaves you use to reach the desired level of sweetness.
