Easy 10 minute lasagna

    This tastes delicious and only takes 10 minutes to prepare! I made this lasagna at 9 months pregnant, feeling nauseated, and desperately searching for a quick and easy lunch recipe. I phoned my mom, who's been making this for years, is a great cook, and likes preparing quick and easy dishes.

    Serves: 4 

    • 1 jar tomato-based pasta sauce
    • 1 pack lasagne sheets
    • 2 tubs cottage cheese
    • 2 eggs
    • 1 tin or punnet of sliced mushrooms (optional)
    • grated cheese

    1. Grease the bottom of the baking dish you are going to use. Heat the oven to 180 C / Gas 4.
    2. Spread a thin layer of pasta sauce on the bottom of the dish. Top with one layer of lasagne sheets.
    3. In a separate bowl, combine the eggs and cottage cheese, and spread half the mixture on top of the lasagne sheets. Add mushrooms, if desired.
    4. Repeat the steps, this time adding layer of grated cheese on top of the sauce. Top the last layer with sauce and grated cheese.
    5. Cover and bake for 1 hour, or till the lasagne sheets are tender the the top is golden and bubbly. Enjoy!
