Preheat the barbecue to a medium high heat.
In a bowl, combine all of the ingredients except the Cornish Blue cheese. Mix well with your hands until all ingredients are well blended. Divide the mixture into 4 equal amounts. Carefully place the thick slice of Cornish Blue into the centre of the mixture and form into a patty.
Place on the barbecue and cook for 4 to 6 minutes on each side until cooked to taste. Remove from the barbecue and serve immediately.
