Slice your pork sausages into 1/2 inch pieces. Season them with the paprika, mild chilli powder, onion granules and oregano. Add oil to a frying pan over medium heat, and fry sausages for around 8 minutes, till cooked through.
Remove sausages when cooked and add onion and red pepper to the pan. Cook for 2 minutes then add garlic. Cook until softened.
Add tin tomatoes, tomato puree, a pinch of salt and generous amount of black pepper and mixed herbs. Bring to boil then allow to simmer.
In the meantime, cook your pasta according to packet instructions.
Once sauce has simmered into a thick consistency it is ready, I like to add black olives to mine and let it simmer for 2 minutes longer. Add sausages and heat through.
Mix pasta and sauce together, topped with grated cheese if wished.
