About this recipe: I love my slow cooker so decided to make one of my favourite dishes in it, and turns out coq au vin is perfect for the slow cooker! The chicken is gorgeously tender.

Serves: 6 

  • 2 tablespoons olive oil
  • 6 bone-in chicken legs, skin removed
  • 200g bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 sprig thyme or rosemary
  • 600ml red wine
  • 100ml passata
  • 1 bay leaf
  • salt and pepper to taste
  • 1 tablespoon cornflour (optional)

  1. Heat the olive oil in a frying pan and brown the chicken on all sides. Transfer chicken to the slow cooker.
  2. Add the bacon, onion and garlic to the same pan and cook till the onion is soft. Pour in just a few tablespoons of the wine and scrape up any browned bits on the bottom of the pan. Pour this mixture over the chicken in the slow cooker.
  3. Add the remaining ingredients to the slow cooker, except for the cornflour. Add water to just cover the chicken if it is not covered already. Cook on Low until chicken is tender, 4 to 5 hours.
  4. Towards the end of the cooking time, check to see if the sauce is to your liking. You can thicken the sauce by mixing the cornflour with water to make a slurry, then adding it to the sauce. Turn the slow cooker up to High and cook uncovered for a few minutes till thickened.

Well it's 3.00pm and I have just completed the instructions as described. However, having got to the end of the recipe I notice that it says cook on low for 4-5 hours. When the method says ready in 2 hrs 10 minutes. I'll have to cook it on high and see how it goes. - 14 Nov 2014
