Spaghetti chilli prawns

    Similar to some recipes but this has a really fresh, vibrant flavour to it. Try it and you will make it time and again. A firm favourite in my house. Serves 4 and ready in 20 minutes.

    Serves: 4 

    • 350g spaghetti
    • olive oil for frying
    • 3 garlic cloves, chopped
    • chilli flakes to taste
    • 1 bunch spring onions, chopped
    • 450g cooked prawns
    • 450g cherry tomatoes, chopped
    • salt and freshly ground black pepper to taste
    • chopped fresh parsley

    1. Boil a pan of salted water and add the spaghetti. Cook according to packet instructions.
    2. Just before the spaghetti is ready heat the oil a a frying pan on medium heat. Add the garlic and chilli and fry for 1 minute. Add the spring onion and prawns and cook for a further minute. Add the tomatoes to heat through and add salt and pepper to taste.
    3. Drain the spaghetti. Return it to the pan and add the prawn-tomato mixture and and juices. Add chopped parsley and toss together.


    Mixed seafood works just as well. You can also use chopped fresh chilli instead of chilli flakes.
