Cajun Sausages

    This is a favourite of mine and I generally freeze it into about four meals and have it with buttered small new spuds and a chunk or two of buttered crusty bread. The spices don't over-power the taste of the other ingredients, great stuff. You will need a large frying pan for this dish.

    • butter or oil for frying.
    • 1 Large onion chopped roughly to fine
    • 8 - 10 any flavour sausages, even veggie ones
    • 2 x 400g cans of chopped tomatoes
    • 2 x 400g cans of baked beans
    • 1 or 2 teaspoons Cajun spice mix (I'm sure there is a recipe for that on this site or you can buy ready mixed)


    1. Fry onion gently until it is just soft and put aside.
    2. Fry the sausages gently until they are brown all round.
    3. Cut the sausages up into 3 or 4 pieces and add the onions to the sausages.
    4. Add all the cans contents to the sausages and mix thoroughly.
    5. Sprinkle one of the teaspoons of spice onto the pans contents and mix it in.
    6. Bring it all up to the boil and turn down to a simmer.
    7. Taste and if desired add more spice to suit your own taste and mix well.
    8. Simmer for about 15 minutes and then serve. Enjoy.


    I think there is enough in this dish for 4 to 6 people, I live alone so it does me for at least 4 meals unless someone visits. Its great as you can defrost one portion in about ten minutes.
