Cuban Sweet Cornmeal in the Pressure Cooker

    Cubans love pressure cookers and sweet desserts. This recipe combines that love into a delicious dessert or baby food.

    • 4 cups water
    • 1 cinnamon stick
    • 1 cup fine cornmeal (Available through Cuban Cuisine)
    • 1 cup sweetened condensed milk
    • 1/4 cup sugar
    • 1/4 cup raisins
    • 2 tablespoons butter
    • 2 teaspoons vanilla extract or one teaspoon concentrated vanilla bean paste
    • Optional topping of Raw Cane syrup is available through Cuban Cuisine UK).
    • Optional topping is often a sprinkle of cinnamon.


    1. Combine all ingredients in the pressure cooker. Bring to a boil, cover and reduce to simmer for 12 -15 minutes.
