Christmas gingerbread house

    Make your very own gingerbread house to enjoy throughout Christmas and the festive season. A new tradition to build with the kids, you can build the house days before in stages, then let the kids join in to decorate.

    Makes: 1 gingerbread house

    • 200g butter
    • 200g caster sugar
    • 250ml black treacle
    • 2 egg yolks
    • 500g sifted plain flour
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • 2 teaspoons ground cloves
    • 2 teaspoons ground ginger
    • Icing
    • 6 egg whites
    • 1.75kg (4 lb) icing sugar, sifted
    • Extras
    • coloured icing and sweets, to decorate
    • icing sugar, for dusting

      Prepare the gingerbread:

    1. In a large bowl, cream together the butter and sugar until smooth. Stir in treacle and egg yolks. Combine the flour, salt, baking powder, bicarb, cinnamon, cloves, ginger and nutmeg; blend into the treacle mixture until smooth. Wrap in cling film and chill for at least one hour.
    2. Cut out the templates for the gingerbread house. You will need four house panels and two roof panels. We have a template you can download here.
    3. Preheat the oven to 180 C / Gas 4.
    4. Turn out the chilled dough onto a lightly floured surface. Divide into 6 portions, 2 slightly larger than the others. On a lightly floured surface, roll out the 4 smaller pieces to approximately the size of the four house panels, cutting out windows and a front door as desired. Roll out remaining dough, and cut into two rectangular roof pieces. Use any remaining dough to cut out decorative shapes with biscuit cutters (ie Christmas trees, gingerbread men, animals, etc.). Transfer dough to baking trays lined with parchment.
    5. In the preheated oven, bake gingerbread for 10 minutes, or until crisp. When removing from the oven, leave the gingerbread on the baking trays for a few minutes to set, then transfer to wire racks. Allow to cool for several hours or overnight at room temperature.
    6. Build the house:

    7. In a large bowl, lightly whisk 2 egg whites. Gradually beat in approximately 1/3 of the icing sugar. The icing should be smooth and stand in firm peaks.
    8. Spread or pipe a 23cm line of icing onto a wooden cutting board, and press in one of the side walls so that it sticks firmly and stands upright. If necessary, use tins or jars to help support it. Take an end wall and ice both the side edges. Spread or pipe a line of icing on the board at a right angle to the first wall, and press the end wall into position. Repeat this process with the other two walls until they are all in position. Leave the walls to harden together for at least two hours before putting on the roof.
    9. Spread or pipe a thick layer of icing on top of all the walls, and fix the roof pieces in position; the roof should overlap the walls to make the eaves. Pipe or spread a little icing along the crest of the roof to hold the two pieces firmly together. Leave overnight to set firmly.
    10. Decorate:

    11. When ready to decorate, make the remaining icing. In a large bowl, lightly whisk 4 egg whites, and mix in remaining icing sugar as before. Use this to make snow on the roof, and to stick on various sweets for decoration. Finish with a fine dusting of sifted icing sugar.

    This gingerbread recipe was perfect for assembling a house. I watched the video first and it was really helpful with great tips and good ideas of how to decorate it. Will do this every year! Loved it.  -  11 Jan 2016

    I love this recipe. Very pleased with the end result. A few weeks ago I made gingerbread 'people' to try the recipe before making my Christmas Gingerbread House. I added extra ginger as we like a stronger flavour. I found the recipe quantity is just right for the panels of the house. The template is great. I was nervous about making my panels too flimsy so I just cut out a door and did not bother with the cut out windows. Three wall panels were assembled then let the icing dry thoroughly (they were propped up with an assortment of mugs etc whilst drying) Then the last panel was added and again left to dry. The roof panels were the trickiest parts to add but again they were propped up with an assortment of items found in the kitchen :0) It is the first time I have tried to make a Gingerbread House so it's not perfect to look at, but we are happy with it.  -  23 Dec 2013
