Sian's Carbonara for 1

    Slightly alternative recipe, super creamy and rich carbonara

    • Pasta of your choice
    • 1 Egg Yolk
    • Bacon
    • 1 Onion
    • 1 or 2 cloves of Garlic
    • Oil for frying
    • Double Cream
    • Cheddar Cheese (optional)
    • Parmesan (to serve)


    1. Start by chopping onions as small as possible, and fry in oil with crushed garlic on a low heat for approx. 10mins or until onions soften
    2. Add pasta to a pan of water- add salt to season.
    3. Cut up bacon rashers into small squares (about 1cm squared) and add to onions in frying pan.
    4. When Bacon is crispy add a small amount of double cream to the frying pan (just enough to cover onions and bacon but not swimming in cream) Reduce down to a beige colour.
    5. Once pasta is cooked, strain and leave aside.
    6. Mix together the egg yolk and about 150ml of double cream (about 1/3 of a mug)
    7. Combine Pasta, Egg+Cream mixture and add to frying pan. Cook for 5 minutes or so to cook the egg and reduce the cream slightly. Add grated cheddar cheese (optional) for a richer flavour.
