Cooking Chilli Sauce

    Bulk chilli sauce used for various recipes you may need that requires chilli or garlic or even use it as a dip. Depending on what chillies you use open as many windows as you can when cooking or you will be crying.

    • 30 mixed chillies (e.g. Scotch Bonnets, Jalapeños, Hungarian Hot Wax, Birds Eye)
    • 200 grams of brown sugar
    • 6 cloves of garlic
    • ½ pint of white vinegar
    • ½ pint of water


    1. Blend ingredients until chillies and garlic have been diced into tiny pieces adding vinegar and water while you slowly blend.
    2. Boil down until it turns into a syrup ( the vinegar taste should have gone) the mixture should also turn a deep red.
    3. Let it cool.
    4. Once cool put into a jar and store in the fridge.
