Hot and creamy marinade

    I got this recipe from a friend of mine, and tweaked it to make it my own

    • 4-6 red/green chillies,chopped
    • 4 cloves of garlic,peeled and crushed
    • 1 thumb-sized piece of ginger, roughly chopped
    • 1 can/packet creamed coconut
    • 1 tsp coriander seeds
    • 1tsp black peppercorns
    • 1tsp cumin seeds
    • 2tsp turmeric
    • Juice 1/2 lime
    • 4 tbsp cold water
    • 1 large bunch fresh coriander
    • 1 bunch fresh mint


    1. Put all spices in a food processor and blitz for 30 seconds.
    2. Add coriander and mint, then blitz again for another 30 seconds.
    3. Add coconut and blitz.slowly add the lime juice.
    4. Add the water one spoon at a time until mixture is slightly runny.


    Goes well with fish ( scallops and shrimp especially) and with chicken.
