4 snickers or mars bars chopped( can use any fruit if u don't want choccy)
4 eggs, separated
50g caster sugar
500ml double cream,whipped
Pinch of salt
70g good quality chocolate (65% cocoa is best)
1 vanilla pod,split or 2 tbsp vanilla extract or bean paste

Melt all the chocolate in a bowl over a simmering pan of water, being careful not to let the water touch the bowl.
Add sugar to egg yolks and the vanilla and beat until smooth.
In another bowl, add a pinch of salt to the egg whites and whisk until you achieve firm peaks.
Fold the whites into the yolks until just combined, then fold it into the whipped cream,again, just until it is all combined.
Gently pour in chocolate whilst mixing gently. It's best to do this quite slowly.
Pour into a freezer tub,cover, and freeze for 3-4 hours minimum.serve.
This recipe also works well with summer berries like strawberries and blueberries. If you are going to use fruit, use 1 1/2 -2 punnets, and blitz them with a tbsp icing sugar until smooth then do as you would with the melted chocolate.
