Spicy panna cotta

    I was inspired to make this recipe watching the hairy bikers Christmas programme last year. It's a really great recipe and is easy enough for kids to do with supervision. My nieces and nephews love making this and all have their own variety they prefer. Here is mine.

    Serves: 8 

    • 2 pints double cream
    • 5 to 6 sheets gelatine
    • 2 teaspoons ground cinnamon
    • 2 teaspoons ground ginger
    • 1/4 teaspoon grated nutmeg
    • 1 to 2 teaspoons ground allspice
    • 6 tablespoons raisins, soaked in 120ml dark rum

    1. Heat the cream on a medium heat whilst you soak the gelatine in a bowl of cold water for 3 to 6 minutes until softened.
    2. Add spices to cream, stirring them in gently, and bring to the boil, then lower heat and simmer for 3 minutes.
    3. Remove from heat and add the gelatine. Stir until dissolved. Drain the raisins and add to the cream mixture (reserve the rum for another use).
    4. Pour into whatever dishes you are using, then allow to cool right down. Place in fridge until set. Serve.
