These delightful prawn and pineapple skewers are absolutely perfect as a starter on the barbecue. Enjoy with some sweet chilli sauce for dipping.

2 tablespoons sweet chilli sauce
2 tablespoons sesame oil
juice of 1 lime
1cm piece root ginger, minced
1 clove garlic, minced
1 small red chilli, seeded and minced
4 spring onions, finely chopped
20 king prawns, shelled and deveined
1/2 pineapple, peeled and cubed

Preheat the barbecue to a medium temperature. Soak the wooden skewers in water for 10 minutes.
In a bowl, mix together the chilli sauce, sesame oil, lime juice, root ginger, garlic, minced chilli and spring onions. Mix well then add the prawns and pineapple and toss to coat well. Feed onto the skewers alternating pineapple and prawns.
Barbecue for 6 to 8 minutes, rotating every couple of minutes until the prawns are an even pink colour. Remove from the heat and serve.
