Russian beetroot salad

    This is a traditional recipe for Russian beetroot salad. Perfect as an accompaniment to a large meal or as a light meal by itself.

    Serves: 6 

    • 3 beetroots
    • 2 carrots
    • 4 small potatoes
    • 2 gherkins, diced
    • 1 small onion, finely chopped
    • 2 tablespoons olive oil
    • salt and pepper, to taste
    • 1 tablespoon chopped fresh parsley

    1. Bring a saucepan of water to the boil and add the beetroot. Cover and simmer gently for 15 to 20 minutes. Add the carrots and the potatoes and cook for a further 10 minutes until the potatoes are tender. Remove from the heat, drain and chill in the fridge overnight.
    2. The next day, peel and dice all of vegetables and mix in the remaining ingredients. Serve.
