Simple shortbread biscuits

About this recipe: Straightforward recipe for shortbread, simple to make. I don't sift anything but perhaps if you do it makes a finer biscuit.

Makes: 3 to 4 dozen

  • 250g salted butter, softened
  • 125g caster sugar
  • 300g plain flour
  • 1/2 teaspoon baking powder

  1. Preheat oven to 180 C / Fan 160 C / Gas 4. Line a baking tray with baking parchment.
  2. Cream butter and sugar together till light and fluffy. Mix in flour and baking powder (I usually just do this with my hands) to form a dough. Chill dough in freezer for 10 minutes.
  3. Roll out dough (1 to 2cm thick) and cut shapes (I used round cutters). Place on prepared tray.
  4. Bake for 12 to 15 minutes, or till a pale golden colour.
  5. Take shortbread out and dust with extra caster sugar. Leave on tray for a few minutes before removing to cool on a wire rack.


If your butter is straight from the fridge, you can use the microwave to soften it. Try a 20 second blast and repeat as needed.
