Divine Scottish tablet

    This is a recipe handed down through the family. I have outgrown my love of all things sweet but my kids, friends, neighbours and family all love it! The secret to this recipe is constant stirring and lots of elbow grease at the beating point.

    Makes: 3 to 4 dozen pieces

    • 300ml milk
    • 50g butter
    • 1kg granulated sugar
    • 397g tin condensed sweetened milk
    • 1 desertspoon golden syrup

    Prep:5min  ›  Cook:35min  ›  Extra time:2hr setting  ›  Ready in:2hr40min 

    1. In a large deep pan, add the milk and butter and melt slowly.
    2. Add the sugar, stirring constantly, and bring to the boil, keep boiling for 3 to 4 minutes.
    3. Add the condensed milk and syrup, still stirring constantly, and bring back to the boil.
    4. Keep boiling for 20 to 25 minutes, still stirring, until the mixture has thickened and turned to a light caramel colour. Be very careful as the mixture may spit a little as it boils!
    5. Remove the pan from the heat and beat until you feel it thicken, usually about 10 minutes. Pour into a square or rectangular tin and leave to set fully at room temperature, usually around 1 to 2 hours.


    Remember to stir CONSTANTLY, never leave the pot otherwise you run the risk of burning the mixture and also that it won't set properly. DO NOT LICK THE SPOON! I made this mistake and had a huge blister on my tongue for days!

    I leave mine on low for 40mins never burns.Then beat for a good 20mins  -  09 Oct 2016
