Slow cooker tasty beef stew

    This easy slow cooker beef stew is a favourite in our household. Really lovely for midweek suppers when you want a nourishing and tasty meal but don't have the time or energy.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 300g mushrooms, sliced
    • 3 tablespoons tomato puree
    • 675g braising steak, diced
    • 1 tablespoon plain flour
    • 600ml beef stock
    • 4 carrots, peeled and sliced
    • 3 tablespoons mixed dried herbs
    • 1 bay leaf
    • 1 sprig fresh rosemary
    • 1 sprig fresh thyme
    • salt and pepper, to taste

    1. Preheat the slow cooker to auto or low setting.
    2. In a casserole dish, warm the oil and add the onion and garlic. Cook and stir until soft then add the mushrooms and tomato puree. Cook and stir for 5 minutes. Transfer to the slow cooker. Toss the braising steak in the flour then increase the heat in the frying pan and brown on all sides. Transfer to the slow cooker. Pour the stock over the beef then add the carrots, herbs and seasoning.
    3. Cook in the slow cooker for 7 to 8 hours on low until the beef is tender. Remove from the slow cooker and serve.
