Mexican Rarebit with Sausage.

    I created this because I had some sausages that needed using up, but I didn't really want just a plain sausage sandwich or bangers and mash. It's a hybrid of cheese on toast, pizza and nachos. The grill isn't necessary but adds colour to the cheese.

    • 4 Sausages
    • 2 Slices of Bread (for Toasting)
    • 3 Medium-sized Closed Cup Mushrooms, sliced
    • 1-2 Chillies, sliced (this of course depends on how hot you want it but 2 supermarket branded ones will be fine)
    • A Handful of Grated Cheese
    • 3 tsp Plain Flour
    • A Good Pinch of Chilli Powder (depends on how hot you want it)
    • A Pinch of Salt
    • A Splash of Worcestershire Sauce


    1. Pre-heat a Grill to 180°C.
    2. Start by cooking the Sausages (it doesn't really matter that much how, I grill mine, but you could fry them.) When they are about 1/2 cooked, cut them in half lengthways and return to cook.
    3. Around about the time you cut the Sausages, add the Mushrooms and Chilli to a saucepan with a little bit of oil/butter/margarine and fry until the Mushrooms begin to turn golden, remove them from the pan and reserve. Also put Bread in the Toaster.
    4. When the Sausages are cooked, add the Flour, Cheese, Salt, Chilli Powder and Worcestershire Sauce to the pan you used for the Mushrooms earlier. Stir constantly until the mixture is bubbling and smooth.
    5. Return the Mushrooms and Chilli to the pan containing the cheese mix and stir until coated.
    6. Place the Half-Sausages on the Toast and cover with the Cheese mix, place under the grill until slightly browned.


    This Recipe Serves 1. The Cheese mix is also great on Tortillas and Nachos.
