About this recipe: This wonderful steamed trout recipe is simple and incredibly tasty. The flavours from the fish and the fresh herbs combine to result in a rustic and stunning centrepiece to any meal.


Serves: 2 

  • 55g butter, softened
  • juice of 1/2 lemon
  • 3 tablespoons chopped fresh rosemary
  • 2 handfuls fresh watercress, chopped
  • coarse sea salt, to taste
  • pepper, to taste
  • 2 (300g) whole rainbow trouts

Prep:10min  ›  Cook:20min  ›  Ready in:30min 

  1. In a bowl, combine the butter with lemon juice, herbs and seasoning. Mix well. Generously rub the fish inside and out with the herb butter.
  2. Steam the fish inside a stainless steel fish steamer for 15 to 20 minutes until the fish is an even colour throughout. Remove from the fish steamer and serve immediately.
