About this recipe: This Parmesan cheese and olive crusted salmon is a tried and tested favourite in our household. Enjoy for dinner with a crisp salad.


Serves: 4 

  • 4 salmon fillets
  • 3 tablespoons olive oil
  • salt and pepper, to taste
  • 55g dried breadcrumbs
  • 55g melted butter
  • 4 tablespoons chopped pitted olives
  • 110g grated Parmesan cheese
  • 1 clove garlic, minced
  • 2 shallots, minced
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh parsley

  1. Preheat the oven to 180 C / Gas 4. Grease a baking dish. Generously rub the salmon fillets in olive oil and salt and pepper. Arrange in the prepared baking dish.
  2. In a bowl, combine the breadcrumbs, butter, olives, Parmesan cheese, garlic, shallots and herbs. Mix well. Sprinkle this mixture liberally over the salmon fillets.
  3. Bake in the preheated oven for 20 to 25 minutes until the salmon is an even pink colour throughout. Remove from the oven and serve.

It was a different twist with the olives and I will use half of them next time. They were a little too strong. Overall a nice dish and the Parmesan adds nice flavor. - 25 Feb 2015
