About this recipe: This apple cake is lightly spiced, tastes great and freezes well. Great for making ahead and storing in the freezer in case of unexpected guests.


Serves: 8 

  • 140g butter
  • 225g caster sugar
  • 2 eggs, beaten
  • 225g plain flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • zest of 1/2 orange
  • 500g apples - peeled, cored and sliced thinly
  • icing sugar, for dusting

  1. Preheat the oven to 180 C / Gas 4. Grease and line a 25cm loose bottomed cake tin.
  2. In a large mixing bowl beat together the butter and sugar until light and fluffy. Add the eggs, one at a time then fold in the flour, baking powder, spices and orange zest. Spoon into the prepared cake tin then layer the thinly sliced apple on top.
  3. Bake in the preheated oven for 90 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin. Dust with icing sugar to serve.
