Preheat the oven to its lowest setting. Line a large baking tray with baking parchment.
Purée the strawberries in a food processor and set aside. In a saucepan over a medium heat, combine the sugar and lemon juice and stir until the sugar dissolves. Pour into the strawberry purée and mix well. Spread the mixture out on the prepared baking tray.
Bake in the preheated oven for 9 to 10 hours until the fruit leather is dry. Remove from the oven and cut into squares, or roll up into cylinders.
