About this recipe: This Asian style wonton chicken salad canapés is a perfect way to kick off a cocktail party or buffet.


Makes: 48 chicken wonton canapés

  • 1 packet wonton pastry
  • 225g mayonnaise
  • 1cm piece root ginger, minced
  • 3 tablespoons chopped fresh coriander
  • 1 red pepper, seeded and finely chopped
  • 300g cooked chicken breast, finely chopped
  • 2 (225g) tins water chestnuts, chopped
  • 110g pecan nuts, finely chopped
  • 110g seedless grapes, finely chopped
  • 4 sticks celery, finely chopped
  • salt and pepper, to taste
  • 1/2 teaspoon paprika

  1. Preheat the oven to 180 C /Gas 4. Grease two 24-hole canapé tins.
  2. Place a sheet of wonton pastry into each canapé hole and press down gently.
  3. Bake in the preheated oven for 8 to 10 minutes or until golden brown. Remove from the oven and allow to cool completely.
  4. In a bowl, combine the mayonnaise, ginger, cilantro and pepper and mix well. Combine the remainder of the ingredients in a bowl and spoon over the mayonnaise sauce. Divide evenly between the wonton cups. Serve.
