This Asian style wonton chicken salad canapés is a perfect way to kick off a cocktail party or buffet.

Makes: 48 chicken wonton canapés
1 packet wonton pastry
1cm piece root ginger, minced
3 tablespoons chopped fresh coriander
1 red pepper, seeded and finely chopped
300g cooked chicken breast, finely chopped
2 (225g) tins water chestnuts, chopped
110g pecan nuts, finely chopped
110g seedless grapes, finely chopped
4 sticks celery, finely chopped
salt and pepper, to taste
1/2 teaspoon paprika

Preheat the oven to 180 C /Gas 4. Grease two 24-hole canapé tins.
Place a sheet of wonton pastry into each canapé hole and press down gently.
Bake in the preheated oven for 8 to 10 minutes or until golden brown. Remove from the oven and allow to cool completely.
In a bowl, combine the mayonnaise, ginger, cilantro and pepper and mix well. Combine the remainder of the ingredients in a bowl and spoon over the mayonnaise sauce. Divide evenly between the wonton cups. Serve.
