About this recipe: This tabbouleh salad has only simple ingredients and flavours yet is the perfect dish to eat by itself or with meat.


Serves: 4 

  • 125g bulgur wheat
  • 600ml boiling water
  • 4 tablespoons olive oil
  • salt and pepper, to taste
  • 1 green pepper, seeded and choppd
  • 2 spring onions, sliced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 2 tomatoes, chopped
  • 2 teaspoons lemon juice

Prep:15min  ›  Cook:15min  ›  Extra time:30min chilling  ›  Ready in:1hr 

  1. Combine the bulgur wheat and boiling water in a bowl and bring to the boil. Cover and simmer for 15 minutes. Remove from the heat and drain any excess liquid. Fluff with a fork. Chill in the fridge for 30 minutes
  2. Remove from the fridge and mix in the other ingredients. Transfer to a serving dish and serve.
