Summer courgette soup

    This summer courgette soup is a great way to use up courgettes if you are drowning in them during the summer months. Serve with crusty bread.

    Serves: 4 

    • 4 tablespoons butter
    • 4 shallots, finely sliced
    • 2 cloves garlic, minced
    • 450g courgette, cubed
    • 200ml double cream
    • 350ml vegetable stock
    • salt and pepper, to taste

    1. In a saucepan over a medium heat, melt the butter and add the shallot and garlic. Cook and stir for 5 minutes until soft then add the remainder of the ingredients. Simmer gently for 1 hour.
    2. Puree the soup with a handheld liquidiser. Serve in hot bowls.
