Chilled summer courgette soup

    This chilled courgette soup is invigorating and refreshing on a summer day. Serve chilled with some crusty bread on the side.

    Serves: 4 

    • 2 tablespoons butter
    • 1 white onion, chopped
    • 1 clove garlic, minced
    • 2 tablespoons plain flour
    • 400g courgette, sliced
    • 400ml vegetable stock
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh chervil
    • 280ml double cream

    1. In a saucepan over a medium heat, melt the butter and add the onion and garlic. Sprinkle in the flour and stir for 1 minute. Add the courgette, stock, herbs, and cream and simmer slowly for 40 minutes.
    2. Using a hand held liquidiser, purée the soup until smooth. Place in the fridge for 2 hours. Serve in chilled bowls.
