- 6 tablespoons fresh chopped mint
- 1 pinch salt
- 55ml white wine vinegar
- 55ml boiling water
- 1 teaspoon light brown sugar

- Combine all of the ingredients in a bowl and allow to steep for 30 minutes. Purée with a hand held liquidiser and serve hot or cold.
