Mint sauce for lamb

    This lovely mint sauce for lamb is the perfect addition to a lamb roast dinner. Great for making ahead and storing in the fridge.

    Ingredients
    Serves: 6 

    • 6 tablespoons fresh chopped mint
    • 1 pinch salt
    • 55ml white wine vinegar
    • 55ml boiling water
    • 1 teaspoon light brown sugar

    Method
    Prep:5min  ›  Extra time:30min soaking  ›  Ready in:35min 

    1. Combine all of the ingredients in a bowl and allow to steep for 30 minutes. Purée with a hand held liquidiser and serve hot or cold.
