In a frying pan over a medium heat, melt the butter and add the leeks. Cook and stir for 4 minutes until soft. In a bowl, combine the leeks with the crème fraiche, goat's cheese, parsley and seasoning and mix well. Divide evenly between the 24 croustades. Serve chilled.
