Leek and goat's cheese croustades

    These goat's cheese and leek croustades are a great way to kick off a dinner party or cocktail party.

    Serves: 12 

    • 2 tablespoons butter
    • 1 leek, chopped thinly
    • 200ml creme fraiche
    • 300g crumbled goat's cheese
    • fresh parsley, to garnish
    • salt and pepper, to taste
    • 24 mini croustades

    1. In a frying pan over a medium heat, melt the butter and add the leeks. Cook and stir for 4 minutes until soft. In a bowl, combine the leeks with the crème fraiche, goat's cheese, parsley and seasoning and mix well. Divide evenly between the 24 croustades. Serve chilled.
