16 large chestnut mushrooms
1 (85g) packet Paxo® Sage and Onion stuffing mix
500ml boiling water
2 tablespoons salted butter
1/2 white onion, minced
55g grated Parmesan cheese
salt and pepper, to taste

Preheat the oven to 180 C / Gas 4. Remove the stalks from the mushrooms and chop finely, set aside. Arrange the mushroom caps onto a baking tray.
In a bowl combine the stuffing mix and the water. Leave to rest for 6 to 8 minutes.
Meanwhile, melt the butter in a frying pan over a medium heat and add the onion and mushrooms stalks. Cook and stir for 4 minutes until soft. Add to the stuffing mixture. Divide the stuffing mixture equally between the mushrooms. Sprinkle the tops with the grated Parmesan cheese.
Bake in the preheated oven for 20 to 30 minutes until the mushrooms are tender and the cheese has turned golden brown. Remove from the oven and serve.
