Salmon mousse parcels

    These delightful smoked salmon parcels are little bites of heaven, perfect as an elegant starter to a special occasion meal.

    Serves: 6 

    • 250g smoked salmon
    • 1 (480g) tin pink salmon
    • 225g cream cheese
    • juice of 1/2 lemon
    • 150g mascarpone cheese
    • chopped fresh parsley, to taste
    • salt and pepper, to taste

    1. Set aside 4 slices of smoked salmon. Combine the remainder of the smoked salmon, tinned salmon, cream cheese and lemon juice. Blend until smooth. Fold in the mascarpone cheese, parsley and seasoning. Divide the mixture between the 4 slices of reserved salmon then roll up into parcels. Serve folded side down.
