    About this recipe: Yummy low fat oat cookies. I calculate these are about 3g of fat per cookie, depending on size. They're also dairy free!

    Ingredients
    Makes: 2 to 3 dozen

    • 60ml sunflower oil
    • 5 tablespoons brown sugar
    • 2 tablespoons caster sugar
    • 1 egg white
    • 1/2 teaspoon vanilla extract
    • 3 tablespoons water
    • 300g rolled oats
    • 40g plain flour
    • 40g wholemeal flour
    • 1/2 bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1 pinch salt

    Method
    Prep:20min  ›  Cook:20min  ›  Ready in:40min 

    1. Preheat oven to 180 C / Gas 4 and grease baking trays.
    2. Whisk together oil and both sugars; add the egg, vanilla and water. Mix well.
    3. Add oats, flour, salt, bicarb and cinnamon. Mix only till blended because it should not be over mixed. Place by spoonfuls onto the prepared tray.
    4. Bake for 15 to 20 minutes.
    5. Take out of the oven when ready. Set them to cool then take off the the baking tray. Enjoy!

    These have such a nice flavour but I actually mucked up while making them. Started off using half ingredients and then forgot halfway through😂 i tried to even it out a little but the end results were still great! - 05 Aug 2014
