One pot nasi goreng

    This one pot nasi goreng is hearty and filling, great eaten by itself as a main course. Add some minced chilli to the pot if you like a bit of a flavour kick.

    Serves: 4 

    • 2 tablespoons butter
    • 2 large onions
    • 3 cloves garlic, minced
    • 2 large chicken breasts, diced
    • 225g frying steak, cubed
    • 85g salted cashew nuts
    • 450g cooked rice
    • 400ml chicken stock
    • chopped fresh parsley, to taste
    • salt and pepper, to taste
    • 225g shelled prawns

    1. In a saucepan over a medium heat, melt the butter and add the onions and garlic and cook for 5 minutes until soft. Add the chicken and beef and brown on all sides. Add the remainder of the ingredients, except the prawns, and simmer gently for 20 to 30 minutes until the chicken is no longer pink in the centre and the rice is tender. Add the prawns in for the last 10 minutes of cooking time. Remove from the heat and serve hot.
