Lamb chops with cheese

    These lovely baked lamb chops with cheese are tasty, filling and wonderful served alongside seasonal vegetables.

    Serves: 4 

    • 3 tablespoons butter
    • 2 onions, chopped
    • 2 cloves garlic, minced
    • 2 green peppers, seeded and sliced
    • 300ml chicken stock
    • 4 lamb chops
    • 4 slices Cheddar cheese

    1. Preheat the oven to 180 C / Gas 4.
    2. In a frying pan over a medium heat, melt the butter and add the onions, garlic and peppers. Cook and stir for 5 minutes until soft. Transfer to a baking dish and pour in the stock. In the same pan, brown the chops on both sides then place on top of the onions and peppers. Add a slice of cheese to the top of each chop.
    3. Bake in the preheated oven for 20 to 30 minutes until the cheese is melted and the chops are cooked to desired taste. Remove from the oven and serve hot.

    Nice easy and quick recipe to follow. Adding cheese to the lamb chops made for an unusual but delicious combination. I served this with baked new potatoes filled with garlic butter. Delicious  -  14 Oct 2014
