About this recipe: This chicken leftovers bake uses leftover chicken and very simple cupboard and fridge ingredients. Serve hot for an easy midweek supper.


Serves: 4 

  • 450g cooked chicken, chopped
  • 225g cooked broccoli florets, or other vegetables
  • 1 (295g) tin cream of chicken soup
  • 250ml milk
  • 1 tablespoon lemon juice
  • 110g grated Cheddar cheese
  • 110g dried breadcrumbs

  1. Preheat the oven to 180 C / Gas 4.
  2. Combine the chicken, vegetables, soup, milk and lemon juice in a casserole dish and sprinkle with cheese and breadcrumbs.
  3. Bake in the preheated oven for 30 minutes until piping hot and the cheese has melted and is golden brown. Remove from the heat and serve.
