About this recipe: These Thai fish cakes are full of flavour and are absolutely delicious with a cool, crisp salad or some seasonal vegetables.


Serves: 4 

  • 900g cod, cooked and flaked
  • 225g prawns - shelled, cooked and chopped
  • salt and pepper, to taste
  • 2 red chillies, seeded and minced
  • 4 spring onions, finely chopped
  • 1/2 red pepper, seeded and minced
  • 1 clove garlic, minced
  • 85ml coconut milk
  • 225g green beans, finely chopped
  • 1 egg, lightly beaten
  • 2 tablespoons olive oil

  1. In a bowl, combine all of the ingredients and mix well. Stir to a consistency which will allow for the mixture to be formed into cakes, adding more coconut milk if necessary.
  2. Form the mixture into 8 cakes. Warm the oil in a frying pan and fry the cakes for 6 to 8 minutes on each side until golden brown. Remove from the heat and serve.
