About this recipe: This slow cooked one pot Welsh lamb stew is hearty and comforting full of the flavours of Wales. Enjoy on a cold evening with some crusty bread and butter.


Serves: 6 

  • 900g neck of lamb
  • 2 red onions, chopped
  • 3 large potatoes, peeled and diced
  • 5 carrots, peeled and chopped
  • 1 bay leaf
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • 1 teaspoon mint sauce
  • salt and pepper, to taste
  • 900ml vegetable stock

  1. Combine all of the ingredients in a casserole dish over a medium heat. Cover and simmer gently for 2 hours until the lamb is tender and no longer pink in the centre.
