About this recipe: Zapiekanka is a Polish baguette sandwich, perfect for lunch time or midweek meals! You can choose to have it plain or garnish with optional additions like mayo, chopped herbs and veg.

Serves: 4 

  • 1 baguette
  • 4 to 8 slices thinly sliced ham or lunchmeat of choice (optional)
  • 150g sauteed mushrooms
  • 100g grated melting cheese of choice
  • ketchup to taste
  • Optional additions
  • raw or cooked vegetables of choice
  • mayonnaise
  • 1 small handful chopped chives

  1. Cut the baguette in half and then cut in half horizontally to yield 4 pieces. If the bread is very long, cut it into 3 pieces and halve each horizontally.
  2. Layer each piece of baguette cut-side up with meat, sauteed mushrooms and cheese. Grill until the bread is crispy and the cheese has melted. Drizzle with ketchup and serve hot with any or none of the optional additions listed.
