This quick, easy and low carb tarragon chicken is great when you need supper in a hurry. Serve with a salad or vegetables.

1 tablespoon butter
juice of 1 lemon
1 clove garlic, minced
1 tablespoon chopped fresh parsley
3 tablespoons chopped fresh tarragon
4 chicken breasts, cut into strips
salt and pepper, to taste

In a wok over a medium heat, melt the butter then add the lemon juice, garlic and herbs. Add the chicken, season and stir fry for 6 to 8 minutes until the chicken is no longer pink in the centre. Remove from the heat and serve.
