Quick tarragon chicken

    This quick, easy and low carb tarragon chicken is great when you need supper in a hurry. Serve with a salad or vegetables.

    Serves: 4 

    • 1 tablespoon butter
    • juice of 1 lemon
    • 1 clove garlic, minced
    • 1 tablespoon chopped fresh parsley
    • 3 tablespoons chopped fresh tarragon
    • 4 chicken breasts, cut into strips
    • salt and pepper, to taste

    1. In a wok over a medium heat, melt the butter then add the lemon juice, garlic and herbs. Add the chicken, season and stir fry for 6 to 8 minutes until the chicken is no longer pink in the centre. Remove from the heat and serve.
