These lovely lemon slices are a delightful citrus treat for your next afternoon tea or summer picnic.

- For the base
- 225g butter, softened
- 400g plain flour
- 110g granulated sugar
- For the filling
- 4 eggs
- 400g granulated sugar
- zest and juice of 1 lemon
- 2 tablespoons plain flour
- 1 teaspoon baking powder

- Preheat the oven to 180 C / Gas 4. Grease a 20x30cm cake tin and line with baking parchment.
- Beat the butter, flour and sugar together until smooth then press into the prepared cake tin. Line with baking parchment and fill with dried beans.
- Bake blind for 15 to 20 minutes until firm and golden brown. Remove from the oven and discard the dried beans and baking parchment. Keep the oven on.
- In a bowl, combine all of the ingredients for the filling and whisk until smooth and creamy. Spoon over the pre-cooked base. Smooth the top.
- Bake in the oven for 20 to 25 minutes until firm. Remove from the oven and allow to cool for 30 minutes before serving.
