Lemon slices

    These lovely lemon slices are a delightful citrus treat for your next afternoon tea or summer picnic.

    Serves: 6 

    • For the base
    • 225g butter, softened
    • 400g plain flour
    • 110g granulated sugar
    • For the filling
    • 4 eggs
    • 400g granulated sugar
    • zest and juice of 1 lemon
    • 2 tablespoons plain flour
    • 1 teaspoon baking powder

    1. Preheat the oven to 180 C / Gas 4. Grease a 20x30cm cake tin and line with baking parchment.
    2. For the base:

    3. Beat the butter, flour and sugar together until smooth then press into the prepared cake tin. Line with baking parchment and fill with dried beans.
    4. Bake blind for 15 to 20 minutes until firm and golden brown. Remove from the oven and discard the dried beans and baking parchment. Keep the oven on.
    5. For the filling:

    6. In a bowl, combine all of the ingredients for the filling and whisk until smooth and creamy. Spoon over the pre-cooked base. Smooth the top.
    7. Bake in the oven for 20 to 25 minutes until firm. Remove from the oven and allow to cool for 30 minutes before serving.
