About this recipe: These lovely moist and chewy raisin brownies are dense and satisfying, perfect for taking along on a picnic.


Serves: 6 

  • 110g butter
  • 150g caster sugar
  • 2 eggs
  • 200g plain flour
  • 1 pinch salt
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 200g raisins

  1. Preheat the oven to 190 C / Gas 5. Grease a 20x30cm cake tin and line with baking parchment.
  2. Cream together the butter and sugar then add in the eggs, beating well after each addition. Sift in the flour, salt, cocoa and baking powder and mix until well blended. Finally add in the vanilla extract and the raisins. Spoon into the prepared baking tin and smooth the top.
  3. Bake in the preheated oven for 20 minutes until a skewer inserted into the centre comes out clean. Remove from the oven and cool before serving.
