This lovely walnut and apricot loaf cake is dense, not too sweet and full of flavour; perfect sliced and served for afternoon tea.

Makes: 1 loaf cake
140g soft brown sugar
1 egg, beaten
190g self raising flour
1 teaspoon vanilla extract
225g chopped dried apricots
225g chopped walnuts

Preheat the oven to 170 C / Gas 3. Grease a 900g loaf tin and line with baking parchment.
Cream the butter and sugar together until light and fluffy. Mix in the sugar then add the egg and vanilla extract. Beat in the milk and then add the apricots and walnuts. Spoon into the loaf tin and smooth the top.
Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 1 hour. Remove from the oven and allow to cool before slicing and serving.
